The Villatoro Family

Located on the western border of Guatemala, the Boqueroncito farm is one of two farms run by Aurelio Villatoro and his nephew Antonio. At an elevation of 1,500 meters, this coffee was grown in a slightly colder climate, which slowed cherry growth and aided in seed density. Why is this important? Well, seed density impacts sweetness, meaning these beans are as sweet as can be!

Prior to coffee, Guatemala was known for exporting natural dyes like indigo and cochineal (red dye from crushed bugs). Once chemical dyes were invented, the demand for natural dyes decreased, and the Guatemalan government decided coffee was the best path toward economic stability. In 1854, the government established the Commission for Coffee Cultivation and Promotion to educate farmers on coffee production and processing. After decades of dividing up land, educating farmers, and developing large plantations, coffee made up 90% of Guatemala’s exports by 1880. As a result, many farmers today have their own wet mills and production facilities.

How long will my beans stay fresh?

Whole bean coffee will stay fresh for about 8 weeks from opening. Make sure to keep it stored in an airtight container in a cool, dry area to maximize freshness!
